圖文：http://bluehero.pixnet.net/blog/post/32650377 時間：2013/8 成都除了川菜之外，也有些特色小食。老媽蹄花便是其中之一，而且是不辣 的菜，適合來四川旅遊卻不敢吃辣的人。 吃完辣得嘴巴都腫起來的陳麻婆後，宵夜選了口味溫和一點的蹄花湯，來到 人民公園附近的廖老媽蹄花店。廖老媽的隔壁也有家蹄花店，看起來跟廖老 媽很像，不要走錯家了。 廖老媽主要提供蹄花料理，也就是豬腳。除此之外，也有些熱菜，不過宵夜 不想吃太多，只想喝碗湯。 雪豆清燉蹄花￥22 清燉的白色湯頭裡躺著一隻豬前蹄，湯頭十分清淡，很難得的沒有家味精， 口味相當清爽，剛喝時會覺得沒味道，細細喝了一會兒逐漸感覺到淡淡的甜 味與膠質口感。 豬腳毛拔的十分乾淨，一根也沒有。豬腳皮相當雪白，口感滑膩軟嫩，筷子 一夾就化開，噸得熟透了。不過沒什麼肉，主要是皮、筋，吃其豐富的膠質 。 另外湯裡還加了大量的雪豆一同熬煮，所以湯的味道裡其實也帶有淡淡豆子 甜味，只是不太明顯。 廖老媽蹄花總店 地址：四川省成都市青羊區東城根南街11號 電話：028-66790382 -- 一個人的美食、旅行與生活...柔藍食單 http://bluehero.pixnet.net/blog -- ※ 發信站: 批踢踢實業坊(ptt.cc) ◆ From: 118.165.3.92 ※ blueherobest:轉錄至看板 China_travel 09/15 10:11 ※ blueherobest:轉錄至看板 Ind-travel 09/15 10:11
